Cook the beef gently with enough liquid until tender before adding the quicker-cooking ingredients. Add the zucchini and eggs near the end so they do not overcook while the beef softens.
Cut the zucchini into moderately sized pieces and add it only when the beef is nearly done. Simmering partly uncovered helps excess moisture evaporate.
Add the eggs when the zucchini is starting to soften. Cook briefly for runny yolks, or cover and cook longer if you prefer fully set eggs.
The beef and zucchini base can be made a day ahead, but adding the eggs just before serving gives the best texture. Refrigerate cooked food within two hours of cooking.
Freezing is not ideal once eggs have been added, as eggs can turn rubbery and zucchini can become watery after thawing. Freeze the beef-and-zucchini base without eggs, then add fresh eggs when reheating.
Reheat it gently over low to medium heat, adding a small splash of water if needed. Avoid prolonged boiling, especially for portions containing egg, and heat until piping hot throughout.
Yogurt, cucumber yogurt sauce, or a lemony green salad add freshness to the rich beef and egg. Bread, rice, or bulgur make it a more substantial meal, while salad or cauliflower are lighter accompaniments.
Not necessarily: adding some of the beef cooking broth gives the stew more depth. Onion, garlic, black pepper, cumin, and a little tomato paste also work well with zucchini and beef.
Its beef and eggs provide protein, so it can fit into a post-exercise meal. After long or high-intensity training, add a carbohydrate-rich side if you need to replenish energy stores.
Anyone with an egg allergy should avoid it or prepare the stew without eggs. People advised to limit cholesterol or saturated fat should choose lean beef and keep added fats modest.
