Reduced-fat cocoa has had some of its cocoa butter removed, so it may taste more intensely chocolatey but feel less rich. In baking, it can produce a slightly drier or less tender result than a higher-fat cocoa product.
Cocoa powder does not wet evenly when it is added straight to hot liquid. First mix it with a small amount of warm milk, plant drink, or water into a smooth paste, then gradually whisk in the rest.
Vanilla, cinnamon, banana, dates, and the natural sweetness of milk or plant drinks can soften cocoa's bitterness. A very small pinch of salt can also round out the flavor.

Keep it tightly sealed in a cool, dry, dark cupboard to protect it from moisture and flavour loss. Discard it if it develops mould, signs of insects, persistent damp clumps, or an unusual sour or off smell.
