Crack each egg into a small bowl first, then slide it gently into the pan. Use medium-low heat so the white sets gradually without aggressively bubbling around the yolk.
Use a non-stick pan with a small amount of fat and keep the heat at medium-low. Covering the pan briefly once the whites begin to set helps cook the top without over-browning the base.
Both work well: butter gives a richer flavour, while olive oil adds a fruitier note. Cook gently with butter because it can brown quickly; combining it with a little olive oil can also help.
