Ice crystals can form when the freezer temperature fluctuates or the container is not sealed well. Small crystals mainly affect texture, but gelato that has repeatedly melted and refrozen should be discarded.
Letting it soften briefly makes it easier to scoop and brings out its flavour and creamy texture. Avoid leaving it out until fully melted.
It is best not to refreeze gelato that has fully melted or sat at room temperature for long. Refreezing can increase food-safety risk and produces a noticeably icier texture.
Close the lid tightly and press a layer of wrap against the surface to limit air exposure. Store it in the main part of the freezer rather than the door, where temperatures change more often.
