An unopened product can be kept at the recommended freezer temperature until its use-by date. Once opened, keep the lid tightly closed and protect the surface from air to limit ice crystals and flavour loss; it is best enjoyed within a relatively short time.
Not necessarily. Ice crystals usually mean the ice cream has partly melted and refrozen or was exposed to air, which mainly affects its smooth texture rather than automatically making it unsafe.
Temperature fluctuations allow larger ice crystals to form. Keeping it toward the back of the freezer rather than in the door helps maintain a more stable temperature and a creamier texture.
