Yes. Cracking the olives, soaking out bitterness, and preserving them in salty brine are processing steps; this does not mean they have no nutritional value.
Green olives naturally contain oleuropein, a compound responsible for bitterness. Olives that have not been soaked or cured for long enough may retain more of that bitter taste.
Rinse them briefly under running water or soak them in cold water before eating. This can reduce surface brine and some salt, but it will not remove all the salt absorbed by the olives.
Keep them refrigerated in a clean container, ideally covered by their brine. Use a clean utensil each time to help prevent spoilage and mould growth.
They can be frozen safely, but thawing may make their texture softer and alter the flavour. Refrigerated storage in brine is usually better for quality.
They work well with eggs, tomatoes, cucumber, cheese, and whole-grain bread. Because olives are salty, balance the plate by keeping portions of other salty foods, such as cured meats or salty cheese, modest.
Neither is automatically the better choice; both can provide beneficial unsaturated fats, while variety and curing method affect flavour and saltiness. Check the label for sodium, added oils, and unnecessary additives, and keep portions sensible.
Olives are not an ideal stand-alone pre-workout snack because their fat content does not provide quick fuel. After training, they can fit into a meal with protein and carbohydrate foods, such as eggs, yogurt, or bread.
People advised to limit salt for high blood pressure, heart disease, or kidney disease should keep portions small and follow their clinician's guidance. Brined foods can add substantial sodium to the day even when the serving seems small.
Discard the product if it has mould, an off smell, gas buildup, unusual discolouration, or a very soft, unpleasant texture. Mild cloudiness alone is not always spoilage, but when appearance or smell is questionable, it is safest not to eat it.
