Roasted coffee beans are brewed into a concentrated extract, then the water is removed by freeze-drying or spray-drying. It is therefore a processed product, but its core ingredient is coffee extract.
Brewing and drying can reduce some of coffee’s volatile aroma compounds. Filter coffee often has a fresher, more complex flavour, while instant coffee is valued for convenience and consistency.
Plain instant coffee is generally suitable in moderation for most healthy adults. The bigger concerns are excessive caffeine intake and added sugar or creamer in sweetened instant coffee mixes.
Boiling water can make instant coffee taste harsher or more bitter. Dissolving it first in a little hot, not boiling water and then adding the rest can produce a smoother drink.
Use fewer granules and avoid fully boiling water. Milk or an unsweetened plant drink can soften the flavour, while cinnamon or vanilla can add taste without relying on sugar.
Keep the jar tightly closed in a cool, dry place away from light. It should retain good quality until the date on the package if moisture is kept out and its aroma has not noticeably deteriorated.
Usually no. Refrigerator humidity and condensation can cause the granules to clump, so a dry cupboard with the lid tightly sealed is a better choice.
For people accustomed to caffeine, plain coffee before exercise may support alertness and perceived exercise performance. Avoid having it too late in the day if caffeine affects your sleep.
It can. Caffeine may delay falling asleep and reduce sleep quality, especially in caffeine-sensitive people, so decaffeinated coffee can be a better evening option.
During pregnancy, total daily caffeine intake should be limited, including caffeine from tea, cola, energy drinks and chocolate. Follow the advice of your clinician or dietitian for an amount appropriate to your circumstances.
